If you are used to using store bought vegetable stock then please try making your own easy and healthy stock. You get to decide what goes into the stock, its all fresh ingredients and you can store the stock in the fridge for 3 days or freeze it for up to 6 months! The ingredients are made up of what you would normally have in your fridge and if you are anything like me, then you have a freezer bag with all the left over veggies from when you are cooking other dishes all bagged up and ready to go for when you need to stock up on some veggie stock.
Home-Made Vegetable Stock
A light vegetable stock that keeps for roughly 3 days in the fridge and up to 6 months in the freezer. The quantity of ingredients is flexible.
- 1 Onion unpeeled
- 2-3 carrots roughly chopped
- 2-3 celery stalks with leaves
- 2 bay leaves
- 3 Garlic Cloves slightly pressed
- Step 1 Place all your vegetables in a saucepan/pot
- Step 2 Cover with water
- Step 3 Add bay leaves, garlic cloves, and peppercorns
- Step 4 Bring to the boil for 20-30 minutes
Tips & Notes:
Make ahead of time, keep in the fridge for 3-4 days and freeze for up to 6 months.
Using the back of a knife gently press the garlic for extra flavor
Leave the skins of the all the vegetables on including the garlic and onion.
