Mixed Green Salad With Beets & A Dressing Recipe

Even though we are leaving summer behind there is always room for green salad and this mixed green with beet is not just a side salad, with all the fresh veggies filling the bowl you just may be able to call it a complete meal!

I find its always better buying the fruit and vegetables that are in season otherwise it’s like I’m fighting against the current. The prices are so much higher and I find myself mulling over too much so I prefer in season fruit & veggies.

Before I go on with my skepticism about how the fruit and vegetables are grown, let me share my salad recipe with you and in truth, I take photo’s of the ingredients to remind myself of what I used or else I will surely forget.

Hopefully when and if you make it, it will taste as vibrantly delicious as it did for us!

Green Salad

The best part about making a mixed green salad is that you can really either add in all your favorite greens and then toss in some feta (which I didn’t use in this salad) or like I did, use whatever you have on hand and what you think needs to be used before it loses its fresh crisp crunch.

What is salad without dressing?

Just as good for some of us! I have no problem eating a salad without a dressing but I also appreciate a good tasting salad dressing. Getting bored with the normal olive oil and balsamic dressing? Or the store bought versions? Then give this a try and you can tailor it to your own taste.

At least you know what’s going inside your dressing.

To make the dressing add the following ingredients;

Olive oil
Fresh lemon juice
Whole grain mustard
Red wine vinegar
Honey
Salt
Black pepper

It’s as easy and tasty as that!

Mixed Green and Beetroot Salad

Summer greens in the winter time are still a family favorite side dish or anytime dish really. Baby spinach, lettuce and some left over cooked beets are a perfect and healthy salad combination.

By:

Ingredients
  • Baby spinach
  • Mixed lettuce
  • Cooked Beetroot
  • Spring Onion
  • 1/2 Red onion
  • Carrots
  • Celery
  • Mixed colorful baby tomatoes
  • Danish cheese
  • Avocado pear
  • Olives
  • Raisins
  • Olive oil
  • Mustard
  • Fresh lemon
  • Red wine vinegar
  • Season to taste the dressing
Directions
  • Step 1 Thoroughly rinse, clean, slice or chop all your veg
  • Step 2 Assemble or layer everything into your salad bowl including the beets
  • Step 3 Mix the dressing ingredients
