There is so much goodness in this recipe and eating an oatmeal, banana and berry breakfast, with the low fat content and high fiber is a smart choice to say the least.
This Granola Recipe was so good that it was almost impossible to not add it to this oatmeal, banana and berry recipe!
How to make the oats
Rolled oats also knows as old fashioned oats is the one used here and as always I am a little old fashioned in that I simply love cooking oats on the stove! Yes you can cook in the microwave as my daughter always says ‘you know you can cook it in the microwave hey mum’ and I smile. Stove top oats are a lot creamier than microwave oats.
Also adding the milk and/or water as well as the essence (for this recipe) while on the stove it allows it to simmer into a creamy breakfast porridge rather than pouring the milk over.
Berries fresh or frozen?
You can top off your oats with fresh berries but if you only have frozen berries on hand then you can add them into the oats while hot.
Oatmeal Banana & Berry Recipe
- 1 cup rolled oats
- 1/2 cup milk
- 1/2 cup water
- 1/8 tsp vanilla essence
- Pinch of cinnamon spice
- 1/4 cup berries
- 1/4 sliced banana
- coconut shavings
- drizzle of honey
- sprinkle of chia seeds
- Mix the oats, water and milk and bring to a simmer.
- Cook until done to your liking and add vanilla & cinnamon. Stir and let it settle for a few seconds into the oats.
- Pour into a bowl and top off with coconut, chia seeds, banana slices, berries and a drizzle of honey.
You might need to add a tiny bit more of oats if you want a thicker consistency.
