Oh good heavens, I remember one of my earlier trips to Italy and I was standing in my mother in-laws kitchen and she was making bruschetta – “bru-sketta” – and I thought I would never get enough it was so good!
This recipe is much simpler, but naturally you can add the topping of your choice, but that was never the idea for them. The idea was to taste her fresh home made crusty bread and enjoy it so much you almost couldn’t hear all the cross conversations which were a norm in the kitchen.
Not done here is what she would always do with Bruschetta;
Split open some cherry tomato’s (yes, theirs were not shop bought they were home grown but still….) and gently rub the tomato all over the roasted bread.
The taste of home-made bread, baked in a home wooden oven, with home made wine, is straight from God. A blessing of all kinds of deliciousness!
Anyway, back to reality, here is the most divine plain and simple bruschetta. Please enjoy and serve with this creamy soup recipe.
My Mother In Laws Bruschetta
The Best Brushchetta Recipe!
- 1 Ciabatta loaf of bread
- 2 Fresh garlic cloves or Cherry Tomato'
- Coarse salt
- Extra Virgin Olive Oil
- Dried Oregano
- Step 1 Roughly slice the bread into about 2 to 3 cm thick
- Step 2 Put into the oven and toast on both sides till golden brown
- Step 3 When done, rub the garlic gently all over the bread
- Step 4 Drip some olive oil
- Step 5 Grind some coarse salt over
- Step 6 Add dried oregano
If you are planning to rub cherry tomato’s over the the toast then you may want to leave out the garlic or the combination of both can make the toast more soft rather than crunchy.
