Especially when you need to make something PRONTO yet still need it as delicious as if you had taken an hour, go for the one pan/pot recipes. Mix it all together, top it up with cheese/bacon or both, bake till done.
I have always been someone that doesn’t like any kind of waste so after cooking this basmati rice last night to serve with my tasty tofu recipe the left over rice made a wonderful bake the next morning.
And let me tell you that the tofu was nothing less that crispy and tasty. It certainly left me wishing that I had made more after all the positive feedback 🙂
Anything that was going to make use of last night’s basmati rice and it turned into this rather inspiring and easy rice bake. If I must say so myself, it was very satisfying. If the quantities are too little for you just double ingredients there’s literally not much room for failure here!

I have tried this exact same recipe with canned tuna and tomato and let me tell you something it is always a winner. Its a matter of cooked rice (cook it fresh that day or use it from a leftover meal) and add what you have available on the spot, those are most times the best dishes.
If you are going to make this dish with tuna use the tuna in brine as opposed to tuna in oil. You can always drizzle olive oil after should you want but nothing worse than oily food, well because you can’t take that oil out.
I believe in little to no salt when cooking because you can always add but you cant take out. Except when I’m making creamy hummus of course, that little pinch extra seems to take it from ordinary to extra ordinary!

If you want it spicier simply add a small chopped fresh chili (deseed for less heat)
Try to not leave the Parmesan out it makes for an extra tasty bake
Tofu Pieces (plain or fried in Maizena first as done in this recipe)
Meat or Chicken
Corn or a Mixed Veg
Mix it in with the rice, cheese, spices and bake or grill.

Easy Rice Bake Recipe
This recipe couldn't be easier!
- 1/2 cup cooked basmati rice
- 1 tablespoon white cheddar cheese
- 1 large egg
- Drop of milk
- 1 tablespoon coconut oil
- Fresh basil leaves
- 1 tablespoon Parmesan cheese
- Step 1 Heat a non stick pan and add the coconut oil
- Step 2 Toss in your cooked basmati rice and heat for 30 seconds
- Step 3 Beat the egg with a drop of milk and add into the pan
- Step 4 Mix everything together. Remove from the stove and mix in the Parmesan cheese.
- Step 5 Pour the mix into a lined baking tin and grill for 5 minutes.
- Step 6 Serve with fresh basil leaves and enjoy!
