Suggestions for this easy breakfast/snack
If you have left over chicken to shred and add on top of the toasted bun/bread that’s great but any other meat can be used – cold meats, bacon, salami, sausage etc. For those who love cheese, some grated cheese and even some grilled onion! If you prefer the vegetarian option you can use grilled peppers, eggplants and zucchini.
THE BEST POACHED EGG ON TOAST BREAKFAST
- 1 egg
- 2 slices tomato
- 1/2 cup shredded chicken
- 2 slices yellow pepper
- dash vinegar
- 1 tbsp vegetable oil
- 1 tsp olive oil
- Add about 2 cups of water into a small pot and bring to the boil.
While that's happening, heat a non stick grilling pan and add the vegetable oil to heat.
Once the water is boiling, add a dash of vinegar and, using a whisk stir into the water to make sure the water is moving in fast swirl/spin.
Now gently crack open the egg into the water while its still swirling. Let it cook for about 3-5 min.
- Meanwhile put the tomato and peppers to grill brown on both sides. Set aside. Toast the bread.The egg should be done, gently remove with a ladle/spoon and set aside to coolToast is done, add a drop of olive oil onto the dry toast followed by the rest of the ingredients, grilled tomato & peppers, shredded chicken and season as you go/wish.
