Making a healthy meal is easier than you think and definitely NEVER needs to be complicated to taste delicious! This egg bake breakfast is delicious, light and gives you a good clean eating start to your day.
It’s a new year and that always comes with new goals and new beginnings. I have read a lot on line about how we should stop being ridiculous because goals don’t last. What is wrong with being hopeful for the future? And since when did it become “wrong” to have a resolution or resolutions? That makes me sad and annoyed because we are all allowed be inspired and if making new beginnings or resolutions works then go for it!
2019 and Food
Most resolutions are about careers, food, relationships, finance and generally just being better. Better at being a better human being. That’s all. Nothing wrong with that. Besides, life is much too short to not live your best life and how you choose to find that bit of inspiration is entirely up to you.

This recipe is a simply a matter of getting all the ingredients into the ramekin, pour a little water into the oven tray and in they go into the oven for 15-18 minutes on 190 degrees.
Can you make these the night before?
What a good idea! If you are making these to be ready in the morning before work then prepare the ramekins overnight, cover with cling wrap and leave them ready in the fridge.
When you wake up heat the oven, add a little water in the oven tray and leave them to bake while you get ready. Don’t forget them! Put on an alarm well at least I have to or I will forget them.
What can you add into this egg bake?
Well whatever is available and whatever you like because there are tiny bits of everything in these and as you can see I tried to stuff them a bit much but that’s how I like it 🙂 So be creative.
These are 2 slightly different dishes that I prepared for my husband and I. He doesn’t eat mushroom so I used cheese for him and mine has grated mushroom on. Other ingredients in these delicious breakfast egg bakes are bacon, left over cooked chicken pieces, whole cherry tomatoes, peppers and of-course eggs.

Other options for this egg bake?
Layer the ingredients in any order that you want. You can start with the bacon and end with grated cheese and grated mushroom as in this recipe.
Instead of bacon you can use sausage, ham, chorizo, broccoli, zucchini and you also add a drop of cream instead cheese, really just go with it and enjoy!
Healthy Egg Bake Breakfast Recipe
You can prepare this healthy egg bake the night before, cover in cling wrap and bake in the morning while you get ready for your day!
- 4 eggs
- 1 grated mushroom
- 1 tiny piece of cheese
- 8 cherry tomatoes
- 1/4 piece of a green pepper
- 1/4 cup of bacon
- Drizzle of olive oil
- 1 cup water
- Freshly ground pepper
- Himalayan salt
- Step 1 Heat the oven to 190 deg.
- Step 2 Pour the water into the oven tray and set aside.
- Step 3 Drizzle the ramekins with a little oil.
- Step 4 Layer your ingredients on top of the oil drizzle.
- Step 5 Season with salt & pepper.
- Step 6 Bake till done.
