January is extremely hot this side of the world and this spinach and sweet potato salad is not only healthy it’s also delicious! The cubed sweet potato gives it a nice crunch and keeps you full for longer especially up if you are wanting to spend less time in the kitchen and less time eating (I mean who doesn’t its January after all).
Spinach, Sweet Potato Salad and a Balsamic Dressing
No one wants to switch the oven on when the weather outside is 30 degrees much less you will be working up an unnecessary sweat in the kitchen as well as warming up the entire house. This salad is quick and easy like most salads are and if you are going to use the oven try and get all your grilling done at that one time and rather store what you are not using in sealable containers in the fridge.
This makes it so much easier when you are putting something together the next day like this salad for lunch time! Just to get something in besides only greens add what you have in your containers prepared perhaps at dinner last night.

Spinach and Sweet Potato Salad
A 15 minute healthy, crunchy salad!
- 2 cups baby spinach
- 1 diced yellow pepper
- bacon pieces 1 cup
- 1 cup halved cherry tomatoes
- cubed grilled sweet potatoes 1 cup
- 1 tbsp olive oil
- Step 1 Heat a the oil in a non stick pan
- Step 2 Add the bacon and fry for for a minute or 2 before adding 1 cup spinach. Remove from the heat.
- Step 3 Combine with the rest of the ingredients in a bowl and serve with a salad dressing.
