Grilled Carrot Salad, 5 Ingredients, 5 Minutes

Cherry tomatoes, grilled sliced carrots, crunchy greens and wild rocket with a balsamic dressing is nothing less than an aha moment! I was trying it out and it was so delicious that I can’t wait to make it again! As you may know that I am anosmic. To be precise I am a congenital anosmic which means I have never been able to smell. Sometimes, like in the taste of this salad, I sincerely believe that my sense of taste has always been heightened almost compensating for the lack of smell?

Anyway………so many sensational miracles were happening in my mouth it was incredible. Loved it!

Something else that I love is color and not just in my food also in my clothes, jewelry etc.  I have to admit I seem to calm down with each birthday but not with food 🙂  There’s never too much color in food for me.

This grilled carrot salad is so easy to get together it’s crazy but that doesn’t take away from the taste at all!

I’ve been having more and salads as explained in this post where I experimented with bacon, spinach and cubed sweet potato which was absolutely delicious!

It’s very easy to eat healthy when you do the obvious things like make sure you don’t buy any “unhealthy” foods and then just go with it. Make sure every meal has some color in it. A simple salad is easy but sometimes (well I know I do) you want a bowl that’s gonna satisfy all your cravings in one and this little salad for one does exactly that.

Combined with a balsamic or mustard dressing!

This recipe has no notes and no quantities because it’s a salad for a single serve and I will cringe before I tell you how many cherry tomatoes and lettuce leaves to use 🙂 Just enjoy it xxx

Grilled Carrot Salad, 5 Ingredients, 5 Minutes


  • Fresh Lettuce
  • Cherry Tomatoes
  • Cucumber
  • Wild Rocket
  • Roasted sliced carrots
  • Step 1 Mix all the ingredients together and enjoy with a salad dressing or just a plain balsamic and olive oil and a squeeze of fresh lemon.
