Flour-less Delicious Spinach Pancakes

In the old days a wooden spoon and a whisk did the trick and trust me, we’ve been cooking without electrical gadgets.

These spinach pancakes were made using a basic food processor but you can fold the ingredients together with a spoon, heat a pan (non stick please) add the oil, I’m currently using olive oil but you can use any oil and they will still come out just fabulous so just do it and enjoy!

Although breakfast is the most important meal of the day for so many reason that we are all aware of it has never been that easy for me to have breakfast unless its the weekend! I know it sounds crazy but on mornings of the weekend I am completely ready for breakfast or brunch which is definitely my favorite time to eat (that took me a lifetime to realize).

Am I saying that electrical gadgets are not important?

Absolutely not. What I am saying is clear, I am of the culture to make do when you don’t have something. If it’s there and makes the job easier then definitely why not right? But its really not a matter of you cant make the pancakes because the recipe says food processor and you don”t have one. So there, you can still make them.

Spinach Pancakes

Scrumptious pancakes! Yes these are definitely scrumptious, healthy, quick and easy to make and anyone's best weekend weekday breakfast!

  • 2 eggs
  • 8 tbsp rolled oats
  • 1/4 tsp baking powder
  • 1 banana
  • 1.5 cups baby spinach
  • 2 tbsp almond milk
  • 2 tbsp olive oil
  • honey
  • chia seeds


  • Add the oats into the food processor and pulse for a few seconds just until the oats is a little finer not completely crushed. 
    Add the rest of the ingredients into the processor (except the milk, honey & chia seeds) and spin just so that everything can mix well.
    Using a spatula to clean the sides and taste to see if you prefer a pinch of salt, chili flakes, more spinach, milk etc. 
    Heat the oil in a non stick pan and drop spoonfuls of the spinach mix into the pan and fry till golden brown on either side. (a few seconds on each side)


No salt was added in this recipe so taste and add to the mix if you like but I don't think it needs salt.Β 
I didn't measure the spinach so just hand about a handful/cup and half.Β 
I counted the spoonfuls of oats just for this recipe so go slowly with yours and add as you go. You will see the consistency that you are looking for.Β 
When you drop spoonfuls into the hot oil its best to have the stove on medium heat so they don'tΒ burn without cooking so keep the heat low.
I did use a food processor but I tell you that you can mix everything together with a wooden spoon and it will still come out great! So if you don't have a food processor please don't not do the recipe for that πŸ™
The milk can be added slowly depending on how thin or thick you like your pancake consistency to be.Β 
Serve with sprinkled chia seeds and a drizzle of honey. Enjoy!
