What To Remember When Making an Omelette
The term “less is more” definitely applies here – the less heat the better the omelette. Never overcook your omelette!
Cook it on low heat
The trick is to remove from the heat before you think its thoroughly done.

Even though there are 3 types of cheese used in this recipe there is very little of each. I prefer no to over stuff it with cheese so that I can taste the egg, bacon and peppers? but that’s just me.

The Best Spinach And Bacon Omelette Ever
- 3 eggs
- 1 cup grilled bacon bits
- baby spinach
- 1/2 cup mixed cheeses (white & yellow cheddar & mozzarella)
- 1/2 chopped & grilled yellow pepper
- Pinch salt
- Pinch pepper
- 1 tbsp butter
- Heat the butter in a non stick pan
Using a fork beat the eggs, salt & pepper together and pour into the heated butter.
Tilt the pan so the egg mix covers most of the pan and then let it cook with no interference for about 30 seconds before gently laying all the baby spinach, grilled bacon, peppers and cheese on top. Grind a dash of salt & pepper and then remove it from the heat. Let the pan stand (off the heat) for 10 seconds or so before sliding it onto a plate and folding it over.
