The chicken ingredients makes a recipe on its own and can be served with zucchini noodles, zucchini ribbons which are perfect if you are on a low carb diet.
However I can’t imagine my husband eating any substitute for pasta because in his mind, there is no substitute for pasta. Here we have added spaghetti to the finished dish and boy and boy, he certainly did go back for seconds. Me on the other hand thoroughly enjoyed it on its own, just simple great tasting chicken! #lowcarb
Chicken Spaghetti Recipe
This was a serving for 4 so I was lucky enough to have leftovers the next day which naturally if you have been following me you will know that I love to eat dinner for breakfast if and when possible. Except that this time I used the leftover chicken in wonderful salad for lunch! There was nothing much else left besides a bit of chicken and olives really but it still made the perfect salad served with my popular balsamic dressing 🙂
This pasta recipe is quick and easy to make, tastes amazing and is done in 20 minutes making it a family favorite.
If you prefer more liquid in your dish just add the wine at the end and remove it earlier from the heat.
If you don’t like wine (why?) use homemade stock or water.
Serve with ground black pepper, fresh herbs and some shaved parmigiana.

Chicken Spaghetti Recipe
- 4 chicken breasts
- 2 T olive oil, coconut oil, or veg oil
- 1 whole onion
- 6 cloves of garlic
- 1 cups white wine
- Italian parsley
- Pinch salt
- 1/2 fresh lemon
- Bring a saucepan/pot with water to boil for the pasta. Heat a skillet or any non stick pan and add the oilLay the chicken breasts down in the hot pan and cook till brown turning over once. Remove from the pan and set aside. Add salt into the boiling water and add the pasta to cook as per pkt instructions. Roughly 8 to 10 minutes. In the skillet/pan add the roughly chopped garlic and onion into the same oil with a little wine to keep it from burning. Add your favorite spices, salt, pepper and olives into the skillet/pan and return the chicken to cook on medium heat with the rest of the ingredients. Don't forget to add the rest of the wine!
Drain the pasta into a colander and set aside.
Cook till done & drizzle with freshly ground pepper. Add the cooked pasta into the pan and serve with fresh Italian parsley, ground black pepper, a drizzle of olive oil and freshly squeezed lemon.
