Hummus has an element of surprise no matter how many times you make it. All you have to do is change the ingredients slightly. Add some cumin spice (not in this one), add some fresh coriander or flat Italian parsley. Use or combine a different type of beans like black beans and all these slight ingredient changes gives you a whole new experience. I love it!

- 2 cans chickpeas (reserve the liquid)
- 1 fresh lemon (juice)
- 1/4 cup tahini
- 1 clove garlic
- 1/4 tsp smoked paprika (for sprinkling)
- 2 tbsps olive oil
- Drain and rinse the chickpeas (reserving the water) and toss into the blender with the rest of the ingredients except the olive oil and the smoked paprika.
- Add the olive oil slowly as the processor is running and if its still too thick (depending on how you like your hummus) thin it down with the reserved water. Taste, adjust accordingly and serve with a sprinkle of paprika and olive oil.
