Rolled Oats or Jungle Oats?
This s a healthy ingredient choice recipe but it can be made with regular ingredients.
There is always the question of can I used Jungle Oats and the quick answer is yes you can. It’s a personal choice and how you want your recipe to come out. Rolled oats gives the bars much more texture and hold their shape well.
Sugar or Natural Sweeteners?
The dates which have natural sugars and honey which anyway is about 60% sugar bring their own twist of sweetness so no further sweeteners are required. This recipe calls for 1 tablespoon of honey with half cup of dates which balanced out the taste perfectly.
Although the coconut is unsweetened and the chocolate is sugar free you can also use regular chocolate and regular shredded coconut to make this recipe.
Freezer or Fridge?
Keep them in the fridge to maintain freshness and shape but I always prefer starting them off for about 10 minutes in the freezer then transferring them to the fridge.
Substitute with your favorite seeds! Pumpkin, Hemp, Sunflower and even dried fruit works wonderfully! In this amazing Peanut Butter Nut Clusters we used dried cranberries.
Honey and Nuts Date Bars 10 Minutes and Healthy
10 minutes to make and just enough time to set in the fridge! These are such a wonderful and healthy snack bars to have on hand.
- 3/4 cup rolled oats
- 1/2 cup chopped pitted dates
- 1/2 cup peanut butter
- 1 tbsp honey
- 1 tsp cinnamon
- 1/2 cup shredded coconut
- 2 tbsps coconut oil
- melted chocolate
- 1/2 cup mixed raw nuts
- 1 tbsp chia seeds
Lay a sheet of baking paper on a flat dish or baking pan (which will later go in the fridge to set the crunchies)
Melt the peanut butter, add honey, cinnamon and oil and mix together.
Add the oats, dates, chia seeds, coconut and nuts (leave some nuts for the top) Combine and lightly press into the prepared tray.
Add the remaining nuts on top and pour melted chocolate over. Freeze for 10 minutes and leave in the fridge for 20 minutes.
