I really didn’t know what to call these chocolate and berry oatmeal bars because there have been a few batches of various bakes leaving this kitchen of which there is a list below in this post. The melted chocolate and the homemade berry sauce on-top gives them such a face-lift that I simply had to go with the name.
From oatmeal to banana, to chocolate, nuts and berries there have been many of delicious bars leaving this kitchen. Loads of reviews on the different ones I love them all however this has got to be my favorite. Don’t ask me why but it may be the cranberries which gives it a natural sweet fruity taste or it could be the PB! I mean its always about the peanut butter right? Or it just might be a matter of personal preference.

THE HYPE ABOUT THESE BARS

Here’s the thing that we all love to have something ready and prepared when the craving sets in. The reason for this is that when you are on a weightless program (which I’m not) or simply trying to make better choices with every choice (which I am) then you want to at least feel prepared.
Trust me, these chocolate and berry bars make you feel prepared because they are both fridge and freezer friendly so whenever you get that sweet craving you have a healthy option.
HOW TO MAKE THESE OATMEAL BARS
Don’t worry about the different shades of the images that’s just lighting. As mentioned in this post that we have colder rainier days here now (officially winter from today) so lighting has also diminished! Not all is lost though, at least we can still see the pictures and get the gist of what on earth I am making here.
It is VERY basic! Get all the ingredients into a food processor and press into a baking dish. You can have the baking dish lined with baking paper (parchment paper) or you can use a non stick cooking spray so that either way you remove it without fuss.
FRIDGE FREEZER TIME
Give this recipe about a minute to settle when you remove it from the freezer before you start getting it out the dish and slicing. You may need a table knife (blunt edges) to slightly slide it in on the sides to loosen it but that’s it really. It pretty much slides out.
How much time should you leave them in the freezer?
Let me simply say that I left them for 15 to minutes and they were perfect. Once out the freezer let them rest for 2 minutes and then slice into bars. Return to the fridge/freezer for storing. I find that keeping them in my fridge makes them a little soft so I keep them in the freezer and they are perfect you can eat them straight out the freezer.

MIXED BERRY SAUCE
This recipe used a combination of cranberries and raspberries to make this vibrant flavorful berry sauce. Add the berries into a heated skillet/pan add a dash of orange juice (fresh or in the box) some lemon and orange zest, muscovado sugar and a bit of water. Cook till the thickness is to your liking.
If you are wondering if you can use the same method with frozen berries then yes you can! Definitely. I used frozen cranberries and raspberries in this recipe and added them to a food processor with drop of milk or water to help the food processor. The minute they were blended (not too much) I added them into a heated pan and followed through with the same method as above.

CHOCOLATE AND BERRY OATMEAL BARS
- 1 cup oats
- 1 cup granola
- 1/4 cup coconut oil (melted)
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 tbsp vanilla essence
- 1 tbsp honey
- 1/4 cup melted chocolate
- 1/4 cup peanut butter
- 1/4 cup coconut flakes
- Combine all the ingredients in a food processor.
- Press into a lined baking tin or (cooking spray) and leave in the freezer to set for 10 to 15 minutes before slicing into bars.
- Pouring melted chocolate or mixed berry sauce is optional.
