Easy tofu vegetable salad that is fresh and filled with colorful crisp vegetables. The tofu adds a great dimension of taste without taking away from the perfectly steamed broccoli and crunchy leafy greens.

What a little spices and olive oil can’t do for tofu whether you are grilling or frying it adds loads of flavor and once done, you can use it in almost any dish that you are preparing.

WHAT YOU WILL NEED FOR THIS RECIPE
- Roasted chickpeas
- Grilled tofu
- Anything you love for a salad!
Generally all you really need for a salad dressing is vinegar and oil and you can have a salad dressing. Should you want to opt for balsamic vinegar and olive oil or red wine vinegar and olive oil you are good to go. A little sea salt and cracked pepper the salad is complete. However sometimes you want a little extra of a salad dressing and making your own homemade balsmic dressing couldn’t be easier.
Tofu Fruit and Vegetable Salad
- 1 cup grilled tofu
- 2 cups steamed broccoli florets
- baby spinach
- leafy salad greens
- 1/2 cup pitted olives
- 1 cup roasted chickpeas
- 1/2 thinly sliced red onion
- cherry tomatoes
- feta cheese (optional)
- raspberries (optional)
- mixed roasted seeds
- Assemble all the ingredients in a salad bowl and serve with salt, pepper and your choice of salad dressing. Enjoy!
