Hello everyone, I am so excited to be sharing this recipe with you!  These Healthy Berry Oatmeal Muffin Cups are really so simple (I know I always say that) but seriously, they are not only healthy but filled with berry deliciousness!  The best part is that is you can keep them in the freezer. as long as you take them out about 5 minutes or less before they are ready to eat whenever you need.

TIPS AND SUGGESTIONS

I know that I keep saying this but seriously this recipe is very simple and all you have to do once you have all the ingredients in the bowl is

  • use your hands to press it into the muffin pan
  • if the mixture is too dry add a little more honey or melted peanut butter
  • if you need a bit more oats for texture then add it in by the tablespoon
  • the measured ingredients work pretty well so the texture should be sticky enough

HEALTHY BERRY OATMEAL MUFFIN CUPS

Ingredients

  • 1 cup rolled oats
  • 1/2 cup chopped dates
  • 3/4 cup fresh blueberries
  • 1/2 cup pumpkin and sunflower seed mix
  • 2 tbsps melted peanut butter
  • 1.4 cup honey

Instructions

  • Add all the ingredients into the bowl of a food processor (or use a wooden spoon and hand mix) and get the ingredients combined into a sticky mixture.
  • Press into a non stick muffin pan and bake on 180 degrees for about 8 minutes or until lightly golden brown.
  • Remove and cool down thoroughly before freezing. Can be served immediately and also freeze very well. Remove to thaw from the freezer for 2 min before eating.
