Baked feta and tomatoes with all the Mediterranean goodness for the soul and taste buds!

- 500 grams cherry tomatoes (seasonal rainbow colors is possible)
- salt and pepper to taste
- 1 tbsp. calabrese spice mix with oil (from Smell and Taste)
- 1 tsp Nduja paste
- 1/4 tsp Calabrese spice
- 1/2 cup roasted bell peppers
- 200 grams feta cheese
- 1/2 fresh lemon squeeze
- 1/4 cup oil (combination of olive oil (sundried tomato oil and roasted peppers oil.)
- fresh basil
Instructions
- Preheat the oven to 200 degrees Celsius and arrange two racks in the oven, one middle to lower and the other further up for grilling. Otherwise, simply move the rack up on that step.
- Prep all the ingredients, I like rinsing and slicing the tomatoes lengthways, making sure they are dry before roasting.
- Add the tomatoes and the rest of the ingredients to a baking dish and bake for 20 minutes. Remove and place it higher up to grill for 2 minutes. Some grills are crazy hot so watch that it doesn't burn!
- Remove it when you are happy with caramelizing from the grill.
- Allow the roasted feta and tomatoes to cool for a few minutes, and add the fresh basil which you gently fold in.
- Serve with this easy crusty bread or this homemade ciabatta.
