Description

In this recipe, we're combining the sweetness of ripe berries with the savory notes of prosciutto and the creamy richness of cheese to create a mouthwatering salad that's perfect for a light lunch or as a delightful side dish for your next outdoor gathering. Serves 2 to 4 people.


Ingredients

  • 2 cups mixed greens (such as baby spinach, arugula, or spring mix)
  • 250 grams 1 cup of fresh strawberries (halved)
  • 1 cup fresh blueberries (or raspberries, blackberries)
  • 4 - 6 slices high-quality prosciutto
  • 1/2 cup blue cheese (or your favorite cheese; goat cheese, feta, or gorgonzola cubed or crumbled)

Salad Dressing

  • 1/4 cup olive oil
  • 2 tbsps balsamic
  • 1 tbsp honey
  • salt and freshly ground black pepper to taste

Optional

  • nuts and seeds for crunch

Instructions

  1. Prepare the Greens: Wash and thoroughly dry the mixed greens. Place them in a large salad bowl, ensuring they're ready to be the base for our delicious salad.
  2. Wash and Prep the Berries: Rinse the strawberries and blueberries under cold water. Pat them dry gently with a paper towel. Slice the strawberries in halves and set aside.
  3. Assemble the Salad: Start by layering the mixed greens in your salad bowl. Then, artfully arrange the fresh berries, cheese, and nuts and seeds (if you choose to use them) on top.
  4. Create the Dressing: In a small bowl, whisk together the extra-virgin olive oil, balsamic vinegar, honey, salt and black pepper until well combined.
  5. Drizzle and Toss: It's best to give everyone the chance to dress their own salad however if you do dress it: Just before serving, drizzle the dressing over the salad. Be mindful not to overdo it; you can always add more if needed. Gently toss the salad to ensure the dressing is evenly distributed.
  6. Garnish with Prosciutto: Finish the salad by scattering the prosciutto pieces over the top, adding a layer of saltiness and crunch.
  7. Serve and Enjoy: Serve your Berries, Prosciutto, and Cheese Salad immediately. It's best enjoyed fresh, as the flavors and textures are at their peak.
