  • bok choy
  • 2 carrots (peeled and thinly sliced)
  • 1 small red onion (thinly sliced (not julienned))
  • 1 tbsp ginger (finely chopped/minced)
  • 3 cloves garlic (minced)
  • 3 Tbps cooking oil
  • 2 tsps rice vinegar
  • 2 Tbsps soy sauce
  • 1 Tbsp oyster sauce
  • 1/4 tsp salt & pepper or to taste
  • 2 to 3 Tbsps water
  • sesame seeds for garnish

Instructions

  1. Prep the bok choy: Start by rinsing the bok choy, let it drip dry in a colander or use a salad spinner. Slice off the hard bits on the end. If your bok choy is large, you can slice them in half lengthways.
  2. Cook the veggies: In a pan, heat the oil and cook the carrots on high heat for roughly 2 minutes and add the onion, stir it together. Add the garlic and ginger, keep it going by combing the ingredients as you add.
  3. Add the bok choy: Pour in the water and add the bok choy. Cover the pan for approxiamately 40 to 50 seconds.
  4. Add sauces: Add the soy and oyster sauces and give it a mix.
  5. Season: Salt and pepper, sesame seeds and serve. Enjoy!
