Caprese Salad (Insalata Caprese)

Description

Isalata Caprese is a classic Italian Caprese Salad Recipe made with fresh mozzarella, tomato, basil and a simple dressing. You can serve this 10 minute salad alongside a main dish or with bread for lunch.


Ingredients

Units Scale
  • 4 large ripe whole tomatoes (medium slices)
  • 300 grams fresh mozzarella cheese (sliced)
  • 1 handful fresh basil leaves
  • extra virgin olive oil
  • 1/4 tsp salt

Optional

  • 2 to 3 tbsps. Balsamic glaze

Instructions

  1. Arrange the tomato slices on a platter or plate overlapping slightly.
  2. Layer the mozzarella cheese between each slice of tomato.
  3. Now add a basil leave between the layers of tomato and mozzarella.
  4. Drizzle all over with extra virgin olive oil and add a sprinkle of salt.
  5. Adding a drizzle of balsamic glaze or vinegar over the caprese salad is optional and can be done just before serving.
  6. Serve for lunch with ciabatta or as a side dish with mains for dinner.

Where can I find the right mozzarella in South Africa?

  1. All Italian deli's 
  2. Some Spar outlets
  3. Most Woolworths stores

What type of mozzarella do I buy?

Buffalo mozzarella (Mozzarella di Bufala) which is a cheese made from the milk of the water buffalo and buffalo milk is higher in calcium, protein and lower in cholesterol than cow's milk. This can be a little more expensive and difficult to find if you're don't have an Italian shop near you although our local Woolies  definitely keeps it so also check out your woolies store.

Fior Di Latte easily available in most spar and possibly all Woolworths outlets. Just another type of soft mozzarella cheese. 

Whole or Cherry Tomatoes

Typically for a caprese salad such as this one you use whole tomatoes. You can use cherry tomatoes for recipes like this Bruschetta Caprese and Crostini. 

What About Balsamic?

Balsamic in any form is not authentic to a caprese salad however feel free to use it if you love the drizzle as much as I do over a caprese!

You can find a balsamic glaze in most outlets, a bit expensive but worth it because it lasts a long time. You can also make your own by simmering down your balsamic vinegar. If you do, the choice is yours to add a little sugar or honey for sweetness My recipe Balsamic Glaze Recipe
