Description

Cinnamon Sugar Pancakes with whipped cream and rolled, just waiting for you to drizzle honey all over, are the best damn pancakes you will ever want! Fluffy, creamy and sweet like marshmallows and the recipe is so easy it's almost embarassing so please don't over think it, make it and taste it!


Ingredients

For The Pancake Batter

  • 1 cup Cake flour
  • 2 Tbsps Sugar
  • 1 Tsps Baking powder
  • 1/2 tsp Salt
  • 1 1/3 cups Milk
  • 1 Egg
  • 1 Tsp Vanilla essence/extract or paste

To Make Cinnamon Sugar

  • 1/2 cup brown sugar
  • 3 tsps ground cinnamon

For Serving

  • whipped cream
  • honey
  • cinnamon sugar

Instructions

Step 1

  1. In a bowl or cup of a blender add all the batter ingredients. Blend or mix with a spoon.

Cook The Pancakes

  1. Heat a pan on medium to high heat. When it's warm enough to cook, spray the pan with cooking spray, or use butter or oil to thinly cover the surface.
  2. Pour the batter into a 1/3 cup measurement and leave it to cook. If you want your pancakes a little bigger, immediately after pouring, hold the pan and gently swirl the batter round to fill up more space.
  3. You will bubble appear in the center and the edges will start to cook first. Use an egg lifter to gently slide it under the pancake and peep to see if its cooked (probably cooked) turn it and cook the opposite side. Repeat until the batter is all used.

Cinnamon Sugar Creamed Pancakes / Serving

  1. Sprinkle cinnamon sugar all over the pancakes and squeeze whipped cream using a piping bag. Roll them up and serve while warm with a sprinkle of additional cinnamon sugar, squeeze of honey, maple syrup or traditional syrup.

Notes

Tip:   If you are using canned whipping cream, make sure to spray close distance to the food or bowl for a better controlled appearance. Squeezing canned cream from a higher top postion makes it look crummy and broken.

Sugar:  Feel free to use less than reqired amount in the recipe, though the comparison to marshmallows is because of the sugar and cream 🙂
