Creamy Chicken Pasta Soup

Description

A delicious Creamy Chicken Pasta Soup with spinach because we all need a soupy bowl of pasta! 🙂 This recipe has a great flavor base which is a strong start to a fantastic meal. It's also easy to prepare starting by building the aromatics and creating a tasty flavor profile that your family will love! This 30 minute meal with Rotisserie chicken pieces, is the perfect pasta night family dinner.


Ingredients

  • 2 1/2 cups pasta
  • 2 tbsps olive oil
  • 40 grams butter ( unsalted)
  • 2 garlic cloves (.chopped)
  • 1 onion ( diced)
  • 1 tsp pasta seasoning
  • 2 tbsps romesca sauce
  • 4 cups chicken stock
  • 2 cups pasta water
  • 3 cups baby spinach
  • 2 00 grams chicken (1 to 2 cups cubed)
  • 2 cups rotisserie chicken white meat
  • 1 /2 cup Parmesan cheese

Instructions

  1. Fill the pasta pot with water 3/4 to the top and bring it the boil. Once boiling add a generous pinch of salt to the water. Add the pasta to par-boil not cook through, it will continue cooking in our simmering liquid. See notes 1 below for par-boil.
  2. While the pasta cooks heat a large non-stick deep saucepan (with sides) or use a stock pot or any large pot with sides.
  3. Add the olive oil and butter. Once heated through add the onions and cook until golden brown. Lower the heat so your onions don't burn, you want them to cook for a anything between 5 to 8 minutes.
  4. Add the garlic, romesca sauce and pasta seasoning. Cook for 2 to 3 minutes.
  5. Combine the stock and pasta water (a measuring jug works best). Now pour about a third of the liquid into the saucepan/stockpot and mix it in with the aromatics - onion, garlic, spice and romesca sauce.
  6. Simmer on medium high for 5 minutes before transferring the par-boiled pasta into the pot. Continue cooking until the pasta is ready, if you need more stock/pasta water add the remaining liquid from earlier. Just before the pasta is completely cooked through, add the baby spinach.
  7. Remove from the heat and sprinkle parmesan cheese and serve.

Notes

Par-boil Leave the chicken out for a vegetarian/vegan option. You can use tomato paste in the flavor base instead of romesca sauce and vegetable stock instead of chicken stock to make it vegan friendly.

Pasta Liquid Remember that the pasta will absorb most of the liquid as it stands which is why I suggested combining the stock and pasta water and only adding about a third. The remaining liquid can be added if you find you need more liquid or of you have left overs. 

How to use the Liquid in Leftovers?

Pour into a saucepan, bring to a medium high simmer and once heated through add the pasta. Combine and serve.
