Scale
- 3 cups oats
- 1/2 cup mixed seeds (pumpkin and sunflower)
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 1/2 cups mixed nuts (almonds, cashews & macadamia)
- 1/4 cup honey
- 1/2 cup melted coconut oil
- 1/4 cup sliced dried cranberries
- peanut butter
- fruit for serving
Instructions
- Preheat the oven to 150C
- Mix the oats and all the other ingredients except the cranberries and fruit.
- Spread it out onto an oven tray lined with baking paper.
- Bake for the first 15 minutes, remove and using a wooden spoon gently push everything together into sort of tight fit. It will probably end up in the center of the pan that's fine as long its all together.
- Bake for another 15 minutes and then take it out again and this time (it will be slightly stuck more together) if not push it together for clumpy cluster granola.
- Pour the melted peanut butter over. DON'T MIX or you will have spread out granola not clumpy granola. Drizzle honey over.
- Return to the oven for about 5 or 10 minutes (depending on how brown you like it) Turn off the heat and leave it to cool on a cold surface. If you want it a darker brown like in my video then leave it in the oven after you've turned the oven off with the oven door slightly ajar and let it sit there till cool or browner.
- Take it out, don't fiddle with it. Leave to cool for at least 40 minutes. Welcome to cluster granola!Enjoy.
