- 2 cups fresh coriander (cilantro) with stems if they are small and tender. Discard extra long hard stems.
- 1 garlic clove, peeled
- 1 cup cottage cheese
- 1 juice and zest
- 1 tsp salt
- 1/4 cup extra virgin olive oil
- 1/4 cup water, to help the blender along but add it slowly not all at once. Check the consistency you may only ned 2 tablespoons.
Instructions
- Add all the ingredients into the bowl of a food processor or blender and blitz or process until the ingredients are well combined and you a sauce consistency to your preference.
- To make this sauce any thinner, add water by the tablespoon and to make it extra creamy and thick, add 1/2 to 1 avocado. Taste for salt and lemon.
- Serve as a dip, spread, sauce or topping.
