Description
I love using leftovers because it's an easy way of repurposing food. So sharing food is always first and anything else must be used up as in this easy frittata. The key thing to remember with a frittata is to not over cook it into a rubbery texture???? So a few minutes cook time is all it needs.

- 2 cups leftover roast meat (more or less)
- 1 tbsp fat (duck fat, butter, olive oil, veg oil etc)
- 1/4 tsp Smell and Taste seasoning
- 2 tbsps. cream cheese
- 1/2 cup thick whipping cream
- 1 tbsp. sour cream
- 1 cup fresh greens (spinach, rocket etc (a mix or just one))
- 6 eggs
- 1 cup mozzarella (freshly grated)
- 1 tsp parsley to garnish
Instructions
- Preheat the oven to 200°C.
- Chop the meats into cubes, whisk the eggs and grate the cheese.
- Heat the skillet/pan and melt the fat and coat the surface of the pan.
- Add the meat and heat it up. Sprinkle Smell and Taste seasoning over the meat. Add the cream cheese, whipping cream and sour cream. Mix to combine for a few seconds.
- Pour the egg over the mixture and using a spoon gently stir the beaten egg in. You're really not stirring, it's a gentle swirl of the spoon randomly in the mixture to incorporate the egg. Just one or two places. (watch the video) Sprinkle with grated cheese and bake for roughly 7 minutes until the edges are golden brown. Remove and let it cool. Serve with a sprinkle of fresh chopped parsley.
