Description

Nothing says summer like the vibrant colors of a caprese salad! This Easy Spinach Caprese Salad makes mouthwatering bites from the juicy cherry tomatoes, tender baby spinach, creamy fresh mozzarella and a simple balsamic vinaigrette dressing.


Ingredients

Units Scale
  • 2 cups fresh baby spinach, packed
  • 1 cup cherry tomatoes, halved
  • 150 grams fresh mozzarella balls (ciliegine mozzarella) or bocconcini

For the dressing

  • 2 tablespoons extra virgin olive oil
  • 2.5 tablespoons juice of a fresh lemon
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt

Instructions

  1. Combine the dressing ingredients, olive oil, lemon juice, oregano, salt and pepper in a small bowl and whisk together.
  2. In a large bowl toss together the spinach, cherry tomatoes and mozzarella and pour the dressing over, toss well together.
  3. Serve: Transfer the salad to a serving bowl and serve immediately and enjoy!
