Description
Extra crispy chicken wings with a lemon and butter sauce. Oh so delicious!

Chicken
- 700 grams chicken wings
- 2 Tbsps. Maizena
- 1/4 Tsp Paprika
- 1 Tbsp. chicken spice
- salt to taste
- drizzle of olive oil
Sauce
- 100 grams butter (unsalted)
- 1 1/2 Tsps. chicken spice
- 1 Tsp paprika
- 1 Tbsp. extra virgin olive oil
- 1 juice of a fresh lemon See notes below
- 1 Tbsp. honey (more or less)
- chopped chives and flat parsley
Instructions
- Dry the chicken wings with a kitchen towel/paper. Let them stand on the kitchen counter for about 20 minutes beforehand if possible to air dry.
- Place a sheet of foil onto a baking tray and a rack over the tray. If you don't have a rack then place them directly on the paper but instead of foil, use baking paper it's more non stick than foil.
- Heat the oven to 200°C.
- Place the wings into a dish and add Maizena, chicken spice, paprika, salt and oil. Use your hands to make sure the ingredients are well combined.
- Use cooking spray over the rack to ensure the wings don't stick and then place them onto the rack. Bake for 20 minutes and turn them over. See notes Back in the oven on one rack higher and the heat turned up to 220°C. Bake for 10 minutes.
- Add into the sauce and serve.
Sauce
- Add the butter and olive oil into a sauce and let it heat up. While it's on a slow simmer add the chicken spice, paprika, honey, lemon juice and herbs. Simmer for 2 minutes and add the wings.
Notes
Lemon
Try and get one with loads of juice to give otherwise warm it up for 10 seconds in the microwave on high to release the most juice.
Turn the chicken wings after 20 minutes
Remove the tray from the oven and use a tongs to lift and turn each one over. Keep the oven door shut while you do this to retain the oven temperature. Work as quickly as possible but don't pull on the wings or they will tear.
