Description

Mediterranean chicken pasta bake is an easy to make flavorful side or main dish any day of the week that's packed with flavor.


Ingredients

Units Scale
  • 3 cups cooked pasta (any)
  • 2 cups shredded chicken whites
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cup roasted bell peppers
  • 1/2 cup artichokes
  • 1/3 cup Parmesan cheese (cubed)
  • 1/4 cup sundried tomato with the oil
  • 1/4 cup parsley
  • 3/4 cup salami
  • 1/4 cup pitted Kalamata olives
  • 1/2 cup bocconcini (fresh mozzarella balls, halved)
  • 1/4 cup fresh basil (chopped)
  • salt & Pepper to taste

Instructions

  1. Cook the pasta in boiling salted water, drain and set aside.
  2. Preheat your oven to 210°C / 410°F
  3. Add the remaining ingredients into a large salad / serving bowl, add the pasta and gently combine.
  4. Use extra virgin olive oil, sea salt, fresh black pepper and pasta seasoning to serve.
  5. Garnish with remaining basil, parsley or both.
