Mediterranean chicken pasta bake is an easy to make flavorful side or main dish any day of the week that's packed with flavor.

- 3 cups cooked pasta (any)
- 2 cups shredded chicken whites
- 1/2 cup cherry tomatoes (halved)
- 1/2 cup roasted bell peppers
- 1/2 cup artichokes
- 1/3 cup Parmesan cheese (cubed)
- 1/4 cup sundried tomato with the oil
- 1/4 cup parsley
- 3/4 cup salami
- 1/4 cup pitted Kalamata olives
- 1/2 cup bocconcini (fresh mozzarella balls, halved)
- 1/4 cup fresh basil (chopped)
- salt & Pepper to taste
Instructions
- Cook the pasta in boiling salted water, drain and set aside.
- Preheat your oven to 210°C / 410°F
- Add the remaining ingredients into a large salad / serving bowl, add the pasta and gently combine.
- Use extra virgin olive oil, sea salt, fresh black pepper and pasta seasoning to serve.
- Garnish with remaining basil, parsley or both.
