Easy Pancakes

Description

An easy pancake recipe that's so dependable and will always give you soft, fluffy pancakes every time. Serve with your favorite toppings!


Ingredients

Units Scale
  • 1 cup flour
  • 1/2 teaspoon Salt
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla essence
  • 1 egg
  • 1 3/4 cups milk
  • 2 teaspoons Buttermilk

Instructions

Blender Recipe

  1. Add all the ingredients starting with the milk, egg, vanilla, buttermilk followed by the dry ingredients using half the flour.
  2. Blend till combined and add the remaining flour. Blend to a smooth pancake batter consistency, a couple seconds in a high powered blender.

Bowl And Spoon Method

  1. Flour, sugar, baking powder and salt into a bowl. Mix to combine.
  2. In a measuring jug, beat the egg and add the milk, vanilla, buttermilk and half the milk. Whisk together.
  3. Pour in the remaining milk gradually as you fold and combine all the ingredients into a smooth pancake batter.

For Both Methods

  1. Heat a non stick pan on medium to high heat.
  2. Give the pan a thin layer of fat with either butter or a cooking spray.
  3. Using a 1/4 cup measurement, scoop the batter and drop into the pan.
  4. When the bubbles appear and the sides are set it's time to flip.
  5. Cook the opposite side until done. About a minute depending on the thickness.
  6. Serve with your favorite toppings.

Notes

Stove heat: Wait for the stove to get hot, lower to the correct medium to hot temperature. Give it a minute or two to maintain that heat and start cooking the pancakes. 

Flipping: Gently feel the sides to see if they're ready to flip. If the batter won't move, it's not ready or the stove is too high in which case, lower the heat.
