Description
Pomegranate blueberry salad is a great seasonal choice of dark leafy lettuce, avocado and feta, drizzled in a light salad dressing.
Ingredients
Salad Dressing
- 3 tbsps. olive oil
- 2 tbsps. balsamic vinegar
- 1/2 tsp salt
- 2 tsps honey or maple syrup
- 1 tsp Dijon mustard
Salad
- 1/4 cup pomegranate arils
- lettuce
- 1 cup cherry tomatoes (halved twice for smaller ones)
- 1 shallot (thinly sliced)
- 1 avocado (diced)
- 1/2 cup feta cheese (cubed)
- 2 tbsps. Flat Italian parsley
- salt to taste
Instructions
Salad Dressing
- In a large salad bowl add all the dressing ingredients and whisk them together. Taste as you go and adjust what you think it needs.
Salad
- Simply add all the ingredients on top of the dressing and toss to combine. It's best to add the avocado after the tossing of the salad so it keeps it's shape as much as possible.
Notes
Balsamic Vinegar - Feel free to use apple cider that's also good with this salad. If you can find like a sherry vinegar.
Maple syrup is not always affordable or easily found so you can try honey.
Storing
I think as like most salads they are best fresh however, as you can see in this recipe the dressing in not on the salad. It really doesn't always have to be. Besides, there's a better chance of storing the salad in the fridge and it staying fresh without the dressing.
