Description
This is an easy, super healthy, satisfying, energy boosting quinoa and sundried tomato salad that I simply had to share! The nutty quinoa texture, salty sundried tomatoes, fresh baby mozzarella balls and seasonal fresh vegetables make this a favorite!

- 1 cup cooked quinoa recipe link below
- 1/2 cup sliced cherry tomatoes
- 1/4 cup sundried tomatoes (packed)
- 1 cup rotisserie chicken (cubed or shredded)
- 1 1/2 cups rocket or mixed salad greens
- fresh mozzarella balls and a light grated parmesan cheese (optional)
Salad Dressing
- 4 tbsps. oil from the sundried tomatoes (or olive oil)
- 2 tbsps fresh lemon juice (1/2 lemon)
- salt to taste
- fresh black pepper
Instructions
- 1 x recipe fluffy quinoa.
- Add the oil from the sundried tomatoes into a side dish or bowl. Use olive oil if your sundried tomatoes don't have enough oil. Add lemon juice and pepper and taste for salt.
- Rinse and drip drain the salad greens. Chop the cherry tomatoes, chicken pieces and sundried tomatoes.
- Add the salad greens with the cooked quinoa followed by the tomatoes and chicken. Combine, add the dressing, taste and adjust. Add fresh mozzarella balls and a light grated parmesan if using.
