Quinoa and Sundried Tomatoes

Description

This is an easy, super healthy, satisfying, energy boosting quinoa and sundried tomato salad that I simply had to share! The nutty quinoa texture, salty sundried tomatoes, fresh baby mozzarella balls and seasonal fresh vegetables make this a favorite!


Ingredients

Units Scale
  • 1 cup cooked quinoa recipe link below
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup sundried tomatoes (packed)
  • 1 cup rotisserie chicken (cubed or shredded)
  • 1 1/2 cups rocket or mixed salad greens
  • fresh mozzarella balls and a light grated parmesan cheese (optional)

Salad Dressing

  • 4 tbsps. oil from the sundried tomatoes (or olive oil)
  • 2 tbsps fresh lemon juice (1/2 lemon)
  • salt to taste
  • fresh black pepper

Instructions

  1. 1 x recipe fluffy quinoa.
  2. Add the oil from the sundried tomatoes into a side dish or bowl. Use olive oil if your sundried tomatoes don't have enough oil. Add lemon juice and pepper and taste for salt.
  3. Rinse and drip drain the salad greens. Chop the cherry tomatoes, chicken pieces and sundried tomatoes.
  4. Add the salad greens with the cooked quinoa followed by the tomatoes and chicken. Combine, add the dressing, taste and adjust. Add fresh mozzarella balls and a light grated parmesan if using.
