Description

This simple green salad with a yogurt and basil salad dressing is both quick and easy and completely satisfying. Pairs beautifully as a side dish or add some chicken and crusty bread for a satisfying meal. 


Ingredients

Units Scale
  • lettuce
  • spinach
  • 2 medium size fresh tomatoes
  • red onion
  • handful of rocket
  • 1 yellow 'snacking pepper' or 1/2 regular size pepper
  • 1 Tsp olive oil
  • 1 fresh lime (thinly sliced)
  • feta cheese
  • fresh mozzarella balls (optional)
  • thick crusty bread
  • 1/2 Tsp Smell & Taste Salt & Pepper (Basics collection)
  • 1/2 Tsp Smell & Taste Garlic & Herb Spice and 1 tsp olive oil for bread

Yogurt and Basil Salad Dressing

  • 1/2 cup yogurt (lactose free used here however any yogurt)
  • 1/4 cup olive oil (extra virgin)
  • 2 Tbsps sour cream
  • 2 Tbsps Djon mustard
  • 1 fresh green chili (sliced)
  • 1/2 tsp Smell & Taste Salt & Pepper Mix
  • 1 clove of fresh garlic
  • fresh basil. about 1/2 handful
  • decorate with a sprig of fresh basil or mint
  • 1 juice of fresh lemon
  • extra juice if needed or you can use a tablespoon of cider vinegar for those who can use it.

Instructions

  1. Start by adding all the dressing ingredients into a blender, blend well to combine, taste for seasoning and set aside in the fridge till ready to use. If you like a bit of sweetness add a teaspoon of honey. For more acidity, add the fresh lemon juice or a teaspoon of cider vinegar.
  2. Prepare the salad by adding the lettuce, tomatoes, onion, spinach, rocket, snacking peppers, Smell & Taste salt & pepper and a tablespoon of olive oil. With clean hands, lift and toss combining all the ingredients. Add the sliced lime, break feta block into the salad, tear fresh mozzarella balls (optional). No mixing after the cheese is in. If necessary use a fork to tidy the cheese across the salad so it's equally divided and gives good presentation if serving on a platter or bowl. Otherwise, use your clean hands to simply heap it into a bowl.
  3. Add the toasted crusty bread and serve. Enjoy! Miranda xx
