Description
A very easy Tomato Cucumber Salad that can be served a number of ways. These fresh seasonal ingredients are chopped very small which make it the perfect dip and appetizer.

- 1 long cucumber (chopped small (suggested, peel on))
- 250 grams cherry tomatoes (cut lengthwise and chopped)
- 2 shallots or 1 red onion (chopped small)
- 1 tbsp. fresh herbs: parsley (basil or dill)
- 1 avocado (cubed/chopped)
Salad Dressing
- 1 tbsp. red wine vinegar
- 2 small lime (zest and juice)
- 1/4 tsp garlic and herb seasoning
- 1/3 cup extra virgin olive oil
- sea salt (generous pinch and a sprinkle of pepper)
Instructions
- Make the dressing, taste, adjust and set aside.
- Combine all the ingredients (except the avocado) in a bowl and toss well. Reserve part of the seasoning as a garnish. Add the avocado last minute before serving with a toss of the dressing.
- Optional: Refrigerate for a short while before serving without the dressing and pour on the dressing when serving.
