Whipped Feta Cheese Dip

Description

Whipped Feta Cheese Dip with no cooking and ready in 5 minutes! Whip up my crunchy cucumber and sundried tomato topping for a treat!


Ingredients

Units Scale
  • 200 grams feta cheese
  • 2 cup full fat creamy plain or Greek yogurt
  • 200 grams plain smooth cottage cheese (room temperature)
  • 1/4 tsp salt and pepper
  • 2 tsbps olive oil
  • 1 lemon (juice and zest, a large lemon will make about 2 tablespoons)
  • 1 tbsp fresh dill
  • 1/4 cup ice water (start with a tablespoon at a time to get your preferred consistency.)

For The Topping

  • cucumber (small cubes)
  • 1 tsp chopped dill (no stems, ferns only)
  • 1 tbsp chopped flat parsely
  • 2 chopped sundried tomatoes
  • 2 chopped roasted bell peppers
  • extra virgin olive oil
  • sea salt
  • sumac

Instructions

  1. Prep the ingredients: Add all the ingredients into a powerful blender or a food processor.
  2. Process/Blend: Blend into the consistency that you want. If necessary, add water to thin the dip out but if you are making this recipe, the ingredients work out perfectly for a high powered blender. Equipment differs, so if you're using a food processor, adjust accordingly.

For The Topping

  1. Add the cucumber, dill and parsley into a bowl and combine. Chop the sundried toamtoes and roasted bell peppers and add to the cumcumber mix.
  2. Serve The Feta Dip: Transfer the dip to a serving bowl. Add the cucumber topping and with extra virgin olive oil and your favorite seasosoing or spice. Here we are using sumac and flaky salt.

What To Serve Whipped Feta Cheese Dip With?

Serve your whipped feta cheese dip with a variety of options;

Crackers: You can include crackers like beetroot, chickpea, wholewheat, sundried tomatoes to bring texture and color to your dip.

Vegetables: Vegetables are excellent servings with dips just make sure that the veggies are fresh and crunchy.
