For the love of roasted tomatoes these Air Fryer Tomatoes have leveled up not only to the convenient method, but also maintaining the juicy tender and delicious freshness! A drizzle of olive oil and seasoning makes them the perfect appetizer, topping or side-dish.
Prep the air fryer: You can use just the basket of the air fryer to roast the tomatoes or a small ceramic, glass or silicone ovenproof dish that can fit into your air fryer.
Preheat: Set the air fryer to 400 degrees F (200 degrees C) . If there is no preheat setting, run the air fryer while you season the tomatoes.
Combine the ingredients: In a bowl, add the tomatoes,salt & pepper, olive oil and chopped parsley. Use a spoon to combine. If you are not using a bowl and have added the tomatoes to the basket, then give the basket a gentle shake to mix the ingredients together or use your hands. Don't wash the dish if not using it to airfry the tomatoes!
300 grams cherry tomatoes, 4 tbsps extra virgin olive oil, salt and pepper, 1 ½ tbsps fresh parsley chopped
Cook: Remove any vine from the tomatoes and air fry for 10 minutes checking in halfways through to give the basket another gently shake.
Transfer to a plate: Remove the tomatoes from the air fryer and transfer back to the mixing dish which is now your serving dish. Add a sprinkle of flaky sea salt, fresh basil leaves and/or fresh thyme and pour any remaining juices from the airfryer over the tomatoes.

Serve on their own, with pasta, on toast, salads or a tart.
Notes
Refrigerate: Keep your air-fried tomatoes fresh and flavorful by storing them in an airtight container in the refrigerator for up to 2 days.
Reheat: Drizzle olive oil over the tomatoes and microwave for 20 second burts unitl warmed through or air fry for 2 minutes.
Freeze: Freshly roasted tomatoes are the best for serving. To freeze, cool the roasted tomatoes completely and place into an airtight freezer container or freezer bag for up 4 to 6 months.
