Healthy Pancakes Dairy and Sugar Free

These blender pancakes are super simple to make and although most oats are gluten free just double check the ingredients to be sure of a gluten free oat pack.

Total Time 10 minutes

Ingredients
  

  • 3 small ripe bananas (the more ripe the better) (or 2 med)
  • 6 egg whites
  • 1 cup gluten free rolled oats
  • 1 teaspoon baking powder
  • Pinch fine sea salt
  • ¼ teaspoon cinnamon

Instructions
 

  • Add all the ingredients into a blender. Blend into an easy not too thick not too runny liquid form.
    If the batter is too runny add a little more oats and blend again.
  • Heat a non stick pan brush it slightly with coconut oil. (Do this for each pancake, just a brush of oil)
  • Pour pancake size batter (estimate) into the pan to cook. When bubbles appear on the top slide the egg-lifter underneath to turn them over and cook on the other side.

Notes

If you want to add nuts, fruit, chocolate chips etc. then mix it into the batter just before pouring into the pan to cook.
If you find your heat is hot, the pancakes are burning or cooking too quickly, yes drop your heat, however if you have a stove with 'mood swings' like mine then it's okay to move the pan off the heat whilst cooking so that the heat of the pan can cool down while the stove cools down.
