CHIA PUDDING WITH A BERRY COMPOTE

This chia dessert is layered with a berry compote and it takes 5 minutes to mix together, anything from a few hours (min 2 hrs) to overnight in the fridge to set. Okay, it's also healthy, refreshing and tastes extremely good so give it a try!
Prep Time 5 minutes
Refrigerate 2 hours
Total Time 2 hours 5 minutes

Ingredients
  

  • 3 tablespoons chia seeds
  • 1/4 cup coconut cream
  • 1 cup mixed berries (or just one type of berries)
  • 1/4 tsp cinnamon
  • 1 tbsp honey
  • 2 tbsps water
  • fresh mint

Instructions
 

  • Mix the chia seeds and coconut milk and leave in the fridge to set for anything between 2 hours to overnight.
  • About 30 minutes before you are ready to use the chia mix you can start making the berry compote.
    Add into a pan the berries, cinnamon, honey, lemon juice and rind and bring it to a simmer. Let it cook/simmer until you have a thick berry sauce. Add the water if needed.
    Once that's done, let it sit till completely cooled down.
  • If the chia and coconut milk mix is too thick, add a little milk or water gradually to get into the consistency that you want but I would suggest adding a teaspoon at a time.
  • Layer the chia seed mix and the berry compote in layers into your preferred glass or bowl.
    Finish with some fresh fruit and fresh mint.
