This chia dessert is layered with a berry compote and it takes 5 minutes to mix together, anything from a few hours (min 2 hrs) to overnight in the fridge to set. Okay, it's also healthy, refreshing and tastes extremely good so give it a try!
Mix the chia seeds and coconut milk and leave in the fridge to set for anything between 2 hours to overnight.
About 30 minutes before you are ready to use the chia mix you can start making the berry compote.Add into a pan the berries, cinnamon, honey, lemon juice and rind and bring it to a simmer. Let it cook/simmer until you have a thick berry sauce. Add the water if needed. Once that's done, let it sit till completely cooled down.
If the chia and coconut milk mix is too thick, add a little milk or water gradually to get into the consistency that you want but I would suggest adding a teaspoon at a time.
Layer the chia seed mix and the berry compote in layers into your preferred glass or bowl. Finish with some fresh fruit and fresh mint. Enjoy! xoxo
