THE BEST POACHED EGG ON TOAST BREAKFAST

Softly poached egg left to cool, grilled tomato, shredded chicken and yellow pepper makes the best poached egg on toast breakfast or lunch and dinner. Healthy, delicious and home cooked, ticks all the boxes to a nutritious start to your day.

Ingredients
  

  • 1 egg
  • 2 slices tomato
  • 1/2 cup shredded chicken
  • 2 slices yellow pepper
  • dash vinegar
  • 1 tbsp vegetable oil
  • 1 tsp olive oil

Instructions
 

  • Add about 2 cups of water into a small pot and bring to the boil.
    While that's happening, heat a non stick grilling pan and add the vegetable oil to heat. 
    Once the water is boiling, add a dash of vinegar and, using a whisk stir into the water to make sure the water is moving in fast swirl/spin. 
    Now gently crack open the egg into the water while its still swirling. Let it cook for about 3-5 min. 
  • Meanwhile put the tomato and peppers to grill brown on both sides. Set aside.
    Toast the bread.
    The egg should be done, gently remove with a ladle/spoon and set aside to cool
    Toast is done, add a drop of olive oil onto the dry toast followed by the rest of the ingredients, grilled tomato & peppers, shredded chicken and season as you go/wish.
  • Gently lift the cooled egg and place on top of the other ingredients
    Using a knife gently cut open for pretty pictures :)

    Drizzle a little more olive oil.
