Heat the butter in a non stick pan Using a fork beat the eggs, salt & pepper together and pour into the heated butter. Tilt the pan so the egg mix covers most of the pan and then let it cook with no interference for about 30 seconds before gently laying all the baby spinach, grilled bacon, peppers and cheese on top. Grind a dash of salt & pepper and then remove it from the heat. Let the pan stand (off the heat) for 10 seconds or so before sliding it onto a plate and folding it over.
