Chicken Spaghetti Recipe

The perfect weeknight meal that goes down well with the family.

Total Time 20 minutes

Ingredients
  

  • 4 chicken breasts
  • 2 T olive oil, coconut oil, or veg oil
  • 1 whole onion
  • 6 cloves of garlic
  • 1 cups white wine
  • Italian parsley
  • Pinch salt
  • 1/2 fresh lemon
  • olives

Instructions
 

  • Bring a saucepan/pot with water to boil for the pasta. 
    Heat a skillet or any non stick pan and add the oil
    Lay the chicken breasts down in the hot pan and cook till brown turning over once.  Remove from the pan and set aside. 
    Add salt into the boiling water and add the pasta to cook as per pkt instructions. Roughly 8 to 10 minutes. 
    In the skillet/pan add the roughly chopped garlic and onion into the same oil with a little wine to keep it from burning. 
    Add your favorite spices, salt, pepper and olives into the skillet/pan and return the chicken to cook on medium heat with the rest of the ingredients. Don't forget to add the rest of the wine!
    Drain the pasta into a colander and set aside. 
    Cook till done & drizzle with freshly ground pepper. 
    Add the cooked pasta into the pan and serve with fresh Italian parsley, ground black pepper, a drizzle of olive oil and freshly squeezed lemon.
