Stuffed Baby Sweet Potatoes

One of the healthiest, filling and healthiest foods on earth is the plant grown sweet potato!

Ingredients
  

  • 4 sweet potato
  • 2 Tbsps oil (any oil)
  • Pinch salt
  • Pinch freshly ground pepper
  • 1 Tsp nutmeg
  • 2 Tbsps cheese (any)
  • fresh green herbs for serving & spring onion
  • 2 Tbsps butter
  • 4 Tbsps hummus

Instructions
 

  • Heat the oven to 190 degrees
  • Line a baking tray with baking paper
  • Rinse and slice the potatoes lengthwise
  • Pat dry with a kitchen towel and rub oil all round the potatoes top and bottom and sprinkle salt and pepper and bake for 10-12 minutes or until slightly done. 
  • When the potatoes are par cooked (should take 10 minutes) remove from the oven and let them cool until you can hold them. Then, using a teaspoon remove the flesh onto a plate.
  • Mash the potato flesh with a fork, add a pinch of salt, pepper, butter and hummus and then fill the potato shells
  • Place a meatball in the center of each potato, drizzle with olive oil and return to the oven to bake for another 10 minutes or until browned to your liking. Should take about 10-12 minutes. 
  • Serve with a drizzle of crumbled cheese and fresh greens.
