Beet Hummus

A 5 minute beet hummus that is used on any and everything!

Ingredients
  

  • 4 small beets
  • 1 cup chickpeas
  • 3 tbsps olive oil
  • 2 chopped garlic clove
  • ¼ tahini
  • ½ fresh lemon juice (or bottle lemon)
  • ½ teaspoon salt
  • 1 teaspoon paprika or cayenne pepper

Instructions
 

  • Slice or roughly chop the roasted beetroot add into the processor with the rest of the ingredients except the oil. 
  • Add the oil gradually with the motor running. Stop to scrape the sides and taste and adjust accordingly.
