In a food processor add the oats and chopped dates and give it a quick whiz.
Pour into a bowl and add the melted peanut butter, oats, coconut, cinnamon, nuts (leave some for topping), seeds (if adding), cranberries (leave some for topping) and pour in half of the melted chocolate.
Press into a tray lined with baking paper and leave in the freezer for 10 minutes before transferring to the fridge. Cut and drizzle with chocolate, sprinkle nuts and more cranberries. Store in the fridge in a container.
