BERRIES AND OATMEAL CUPS AN ALL CLEAN & HEALTHY DESSERT

They are the best, easiest and quick to make, freezer friendly berries and oatmeal frozen cups!
Prep Time 5 minutes
Cook Time 10 minutes
Freezer Time 20 minutes
Total Time 15 minutes

Ingredients
  

  • 1 cup oatmeal
  • 1 cup granola
  • 1 large banana (or 2 small ones)
  • 2 tbsps coconut oil (melted if not already liquid)
  • 1 tbsp vanilla essence
  • 1 cup blueberries
  • 1/2 cup cranberries
  • 1/2 cup raspberries
  • 3/4 cup almond milk
  • 1/4 cup ice water (stand by)

Instructions
 

  • Spray a muffin pan and set aside. 
  • In a bowl combine the oats, granola and oil. Mix into a paste. 
  • Add the mashed banana and mix all the ingredients until well combined. 
  • Add the vanilla essence, mix and scoop into the muffin tin making sure to go 1/2 to 3/4 way up leaving space for the berry filling.  Bake the crusts for about 10 minutes or until golden brown. Once ready, set aside to cool down completely. 
  • Meanwhile pour all the frozen berries into a food processor and add the milk in slowly while the processor is going, a bit at a time until the berries have reached the desired thickness. 
  • If you need to make it thinner then add the ice water but a spoon at a time making sure it stays thick and velvety. 
  • Pour the smooth and velvety berry filling into each cup. Add some extra berries on top and freeze till ready to eat. 
    This is when you can add coconut shavings or chocolate pieces (optional)
  • Take out just 5 minutes before eating to get the perfect bite unless you can eat every cold cups! Enjoy!

Notes

If you don't have homemade granola then you have 2 choices:  
  1. you can increase the amount of oats or
  2. use a shop bought granola 
You can find the shop bought ones with or without the additions like nuts & fruit so it's up to you which one you want to use for the base. 
If you choose the one with the nuts & fruit just check that everything sticks together properly and pressed into the tin properly as well!
You can also substitute the coconut oil for butter or any other oil.
Make sure the oatmeal crusts are baked till golden brown and then cooled down completely before pouring in the ice cold berries.
When adding the milk and water always add the liquid in slowly while the motto is running. Add it through the top checking to see if it needs more. 
Rather stop the food processor scrape the sides down and check to see if it needs more liquid if any. Because you want it to pour into the cups but it must also have some thickness to be a velvety filling otherwise its just liquid and you have to add more berries!
No need to use 3 different types of berries even one will do but I am all about the combination of flavors so I used three!
For a dairy and gluten free option the rolled oats must be gluten free and the milk must be almond milk or any other dairy free milk.
