CRUNCHY PEANUT BUTTER OATMEAL COOKIE RECIPE

Healthy but not healthy these cookies are crunchy and deliciously addictive!

Cooling Down 15 minutes
Total Time 25 minutes

Ingredients
  

1st Bowl

  • 1 cup flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup rolled oats
  • cup granola

2nd Bowl

  • ½ cup brown sugar
  • ½ cup butter
  • ½ cup peanut butter
  • ¼ cup honey
  • 1 egg
  • 1 tablespoon vanilla essence

Instructions
 

  • Measure the rolled oats and granola and set aside. 
    Measure the flour, baking powder and salt and set aside. 
  • Combine the 2nd bowl ingredients and mix until nice and fluffy - sugar, butter, peanut butter and honey.
    Add the egg and essence and mix. 
  • Pour the 2nd bowl ingredients (wet ingredients) into the dry ingredients - flour baking powder and salt and whisk until everything is combined. 
  • Add the granola and oats and whisk into a dry biscuit/cookie dough. 
    Roll into regular ball sizes and place on the prepared baking sheet. 
    Using a fork gently press each one down and tidy the sides with your fingers making sure everything is in tact. 
    Bake at 180 degrees for about 10 minutes or until golden brown. 
    Allow the biscuits/cookies to cool before placing them on a cooling rack to cool even further. 
    Once completely cooled down stored in a container and serve either at room temperature or keep in the fridge.
