Veggie Patties - Sweet Potato & Spinach

I am so happy to be sharing my veggie patty recipe with you! After a few takes and changes I eventually got them exactly the way I wanted them to be and I'm sure you are going to love them too!

1 cooked sweet potato 3 cups baby spinach 1 1/2 cups quinoa (uncooked) 1/2 cup cheese 1 1/2 cups rolled oats 1/4 cup olive oil 1 tsp thyme 1 tsp dried chili flakes 1/2 tsp coriander spice 1 tbsp sriracha sauce salt to taste

Lay a sheet of baking paper onto an oven tray and spray the paper with cooking spray.
Cut the cooked sweet potato into cubes, mash and add into the food processor,
Add the the rest of the ingredients except the olive oil which you can pour in slowly as it spins through the nozzle.
Using a 1/3 cup measuring spoon scoop the mix onto the baking sheet.
Using your hands gently press/shape each one into patties. Bake on 180/190 degrees for about 20 minutes flipping half way through and spraying each side with cooking spray before returning to bake finish.
Cool on a cooling rack and once cold (not cool) store in a sealed container in the fridge.
