Veggie Patties - Sweet Potato & Spinach

I am so happy to be sharing my veggie patty recipe with you! After a few takes and changes I eventually got them exactly the way I wanted them to be and I'm sure you are going to love them too!

Cook Time 15 minutes
Total Time 25 minutes

Ingredients
  

  • 1 cooked sweet potato
  • 3 cups baby spinach
  • 1 1/2 cups quinoa (uncooked)
  • 1/2 cup cheese
  • 1 1/2 cups rolled oats
  • 1/4 cup olive oil
  • 1 tsp thyme
  • 1 tsp dried chili flakes
  • 1/2 tsp coriander spice
  • 1 tbsp sriracha sauce
  • salt to taste

Instructions
 

  • Lay a sheet of baking paper onto an oven tray and spray the paper with cooking spray.
  • Cut the cooked sweet potato into cubes, mash and add into the food processor,
  • Add the the rest of the ingredients except the olive oil which you can pour in slowly as it spins through the nozzle.
  • Using a 1/3 cup measuring spoon scoop the mix onto the baking sheet.
    Using your hands gently press/shape each one into patties.
  • Bake on 180/190 degrees for about 20 minutes flipping half way through and spraying each side with cooking spray before returning to bake finish.
  • Cool on a cooling rack and once cold (not cool) store in a sealed container in the fridge.
