Vegan Cauliflower Pizza Crust

A healthier alternative to your traditional cauliflower pizza crust. Even though it's lighter it makes you fuller for longer, can be frozen and tastes absolutely delicious!

Ingredients
  

  • 1 head cauliflower
  • 1 cup quinoa
  • 1 cup rolled oats
  • 1/4 cup parmesan cheese
  • 1/2 cup mozzarella/white cheddar
  • 1 egg (lightly beaten)
  • 1/4 tsp garlic powder
  • 1/2 tsp salt and a sprinkle of black pepper
  • 1/2 tsp thyme
  • 1/2 tsp oregano

Instructions
 

  • Cut the cauliflower florets off the stem, wash, drain and place them in a food processor. Pulse until the cauliflower becomes like little rice.
  • Place the cauliflower rice in a large microwave bowl and microwave with the lid on for 5 to 8 minutes or until the cauliflower rice has steamed. Microwave, stop, stir, and microwave again.
  • Pour the cauliflower rice onto a couple layers of cheesecloth or a clean kitchen towel and allow it to cool down (it will be very hot so be careful!)
  • Meanwhile line a baking tray with parchment/baking paper and heat the oven to 190/220 degrees.
  • Once the cauliflower has cooled down tighten the cloth and squeeze as much liquid as you can from the cloth/cauliflower.
  • Pour the dry and cooled cauliflower rice into a bowl.
    Add the quinoa, oats, egg, cheese, salt, black pepper, herbs and mix well until combined with the cauliflower rice.
  • Using your hands form a ball with the cauliflower and spread it out onto the prepared tray. Press it out as thin or as thick - large or small as you want it.
  • Transfer the crust to the preheated oven and bake for 15 minutes. Take out the tray and carefully flip the crust over to bake on the other side for 5 minutes.
  • Once the crust is baked to your liking, spread tomato sauce over the pizza with cheese and return to the oven to grill to 2 minutes. Top it with great toppings of your choice.
