Spicy and Easy Chicken Bites

These flavorful pan sheet chicken bites are tender and spicy to your preference then baked inside wraps till golden brown. Yes wrap it up and bake it!

Ingredients
  

  • 4 wraps
  • 4  chicken breasts cubed
  • ½ cup yogurt
  • 2 tbsps  Calabrese spice
  • 2  garlic cloves minced or finely chopped
  • 1  shallot or ½ red onion diced
  • 1 tbsp. olive oil
  • salt and pepper to taste
  • 1  fresh lemon juice
  • 2 tbsps. unsalted butter one melted
  • 1 tbsp. chopped parsley chives or green onion and more for garnish

Optional but suggested extras:

  • basil pesto
  • sour cream

Instructions
 

  • Preheat the oven to 220 degrees C and get an oven tray out, spray with cooking spray.
  • Add the chicken cubes to a large bowl and mix together with the yogurt. Set aside in the fridge and prep the other ingredients.
  • Chop the shallots and garlic cloves.
  • Cut the butter into very small cubes.
  • Return the bowl with the cubed chicken and yogurt and add the rest of the ingredients: your choice of herbs, shallots, garlic, fresh lemon juice, Calabrese spice and salt & pepper.
  • Spread the marinated and seasoned chicken cubes on the sheet pan and bake on 220 degrees C for 15 minutes or until soft and tender and cooked through. Don't leave them longer than 15 minutes because they're going back in the oven!
  • Generously fill the wraps with the chicken and fold them by bringing in the two sides and bottom. Hold them together with a skewer so the chicken doesn't fall out. Brush all over with melted butter and add a small piece of butter over the chicken and then return to the oven for 4 to 5 minutes on grill.
  • Serve with a dollop of basil pesto, sour cream and garnish with fresh herbs.

Notes

Wraps
You can definitely make your own wraps, though there are some wonderful brands out there that you can find. We saved a lot of time and no one really wants to cook on a Friday so we used store bought. 
How to wrap/close the wrap
Fold in the two sides and bring the bottom part up into the fold. The only challenge here is that the wrap won't stay together, the minute you leave it, it will fall open again. What I used was 2 double sided grilling skewers to hold them.
