Tomato Cumber Salad

A very easy Tomato Cucumber Salad that can be served a number of ways. These fresh seasonal ingredients are chopped very small which make it the perfect dip and appetizer.

Ingredients
  

  • 1 long cucumber chopped small (suggested, peel on)
  • 250 grams cherry tomatoes cut lengthwise and chopped
  • 2  shallots or 1 red onion chopped small
  • 1  tbsp. fresh herbs: parsley basil or dill
  • 1  avocado cubed/chopped

Salad Dressing

  • 1 tbsp. red wine vinegar
  • 2 small lime zest and juice
  • ¼ teaspoon garlic and herb seasoning
  • cup extra virgin olive oil
  • sea salt generous pinch and a sprinkle of pepper

Instructions
 

  • Make the dressing, taste, adjust and set aside.
  • Combine all the ingredients (except the avocado) in a bowl and toss well. Reserve part of the seasoning as a garnish. Add the avocado last minute before serving with a toss of the dressing.
  • Optional: Refrigerate for a short while before serving without the dressing and pour on the dressing when serving.
